One for the Barista!?
In July I will open a new cafe in Shanghai: So since I moved to China, there were problems with the steam milk. Sometimes I have a great success on other occasions I get a bubble, but dies within a minute. The milk here is often an animal has to smell (can not explain better than that), a brand of milk foam and a new brand will be half time. I thought it was me, and was tearing my hair with this problem (though my hair fell, of course, years ago, but if there were some that have ruptured) but then I tried soy milk foam and had no problems. Within each time then I tried my babies formula (she likes fluffy): – again no problem. This could happen with milk? HELP I am desperate because I need to get this right before the opening.
You're probably the milk is of poor quality. Malnourished cows produced milk with low fat, and strong perfumes, weeds may smell or taste of milk "off". The animal "smell is just that – my family in the Dairy industry referred to the smell as" heat of the body, and the odor persists, if milk is not cooled down quickly and right after milking the cow. If you can find a source where the dairy cows are fed good protein (wheat, soybeans, corn), are the highest quality milk. Animals fed heavily flavored newspapers (no kidding!) Milk production, thin watery. Once correctly milk foam, has a great body full of milk with a reasonable percentage of milk fat. The rest of the milk is poor, and no technique to do so.
