Covered Saute Pan

I will share one of my favorite recipes, if you share one of her! This is mine, what is your favorite?
Pear, walnuts and Roquefort tartlets Crust: 1 C sifted flour 5 Tbsp. cold butter, diced 3 tablespoons. cold water 1 LG. egg yolk Filling: 2 tablespoons. olive oil 1 lg. the onion half, thinly sliced 1 tbsp. red wine vinegar 1 ripe pear, peeled, halved, seeded 1 tbsp. 1 oz unsalted butter. Or Roquefort cheese blue, crumbled 2 tbsp. chopped toasted walnuts 2 tsp. For the walnut oil pasta: Mix the flour and butter until it resembles cornmeal. Mix water and egg yolk SM. bowl. Stir the mixture until moist clumps form. Gather dough together. Roll out on lightly floured surface. Cut into four, six inch rounds. Line tart pans w / detached funds w / mass. Trim the edges. Cover and chill 30 min. day (can be made ahead, keep refrigerated) for Stuffing: olive oil over medium / high. Add onion and saute until golden. Combine red wine vinegar. Season with salt and pepper and saute another minute. (can be done days in advance) Preheat oven to 350degrees. Crusts Line
soup 3 / 4 cup dried cannellini beans, soaked overnight and drained 4 tablespoons extra virgin olive oil 1 Spanish onion, 1 leek, thinly sliced, white and green parts only, thinly sliced 1 carrot, cut into 1/4-inch dice 1 stalk celery, cut into 1/4-inch cubes 1 clove garlic, thinly sliced, plus 1 whole garlic clove 2 sprigs fresh thyme 1 bay leaf, chopped 1 lbs cavolo nero (black cabbage), coarsely chopped 1 / 2 pound white cabbage, roughly chopped 2 tablespoons tomato paste 3 cups water scarce 4 (1/2-inch) slices of peasant bread Italian Salt and freshly ground black pepper freshly grated Parmigiano-Reggiano Place presoaked cannellini beans in a medium saucepan. Add water to just cover the beans and bring water to a boil over high heat. Reduce the heat and let simmer until the beans tender, about 1 hour. In a 12-inch skillet, heat oil over medium-high heat until that smoking hot, but no. Add the onion, leek, carrot, celery, sliced garlic and herbs. Cook, stirring occasionally, until vegetables begin to soften, about 5 minutes. Add the black and white cabbage and cook until the cabbage has softened and the flavors have blended, about 10 minutes. Salt and pepper to taste. Remove rosemary sprigs and thyme and bay leaves. Add the tomato paste and stir until tomato paste is well distributed throughout the mixture of vegetables. Preheat the grill or broiler. Add vegetable mixture to the pot with the beans and water and let simmer until flavors are well blended, about 30 minutes. When the soup is about to be done, toast the bread grilled until browned on both sides. Cut the remaining garlic clove in half and rub the toast with the cut end of garlic. Discard garlic. Ladle the hot soup into 4 warm bowls with garlic toast on the side. Garnish with a sprinkling of Parmigiano to taste.
